Diane Rickard’s chocolate cake takes top honors at fair

HONESDALE, PA — Local home bakers created decadent cakes during the Wayne County Fair’s homemade chocolate cake baking contest. The contest was sponsored by the Pennsylvania State Association of Fairs (PSACF).
Diane Rickard from Honesdale took first place with her chocolate cake recipe.
She is now eligible to compete in the state finals in January at the Pennsylvania Farm Show in Harrisburg.
The first-place winner at the farm show will be awarded a grand prize of $500.
PSACF has been in existence since 1912. Over 100 member fairs, associations or societies hold annual events that showcase the commonwealth’s top industries—agriculture and tourism.
An estimated 5.5 million people visit PA fairs each year, enjoying amusements, food, entertainment, judged competitions and experiencing Pennsylvania’s rich agricultural heritage.

Chocolate cake

Make the cake:
2 cups flour
2 cups white sugar
1 cup dark cocoa
1 cup melted butter
2 cups hot water
2 teaspoons baking soda
2 eggs, beaten
2 teaspoons vanilla
Preheat oven to 350 degrees Fahrenheit.
Sift flour, sugar and cocoa.
Dissolve the baking soda in the hot water.
Make a hole in the middle of the flour, sugar and cocoa mixture, and add the melted butter and the hot water/baking soda mixture.
Stir together.
Add the beaten eggs and vanilla and mix.
Divide cake between three 8-inch cake pans. Bake for 18 minutes.
Make peanut butter filling:
1 cup unsalted butter, room temperature
1 cup creamy peanut butter
3 cups confectioner’s sugar
1/2 cup heavy cream
pinch of salt
In a stand mixer, cream together the peanut butter and unsalted butter for 3 minutes.
Add sugar, scrape down sides of bowl, and mix until combined.
Pour in heavy cream and beat until smooth. Scrape bowl again.
Add the salt.
Beat on high for 3-4 minutes or until mixture has become light and fluffy.
Make white chocolate frosting:
6 1-ounce squares white chocolate, chopped
2 1/2 tablespoons flour
1 cup milk
1 cup butter, softened
1 cup white sugar
1 teaspoon vanilla
In a medium pot, combine white chocolate, flour and milk. Cook over medium heat, stirring constantly until the mixture is very thick. Cool completely.
In a large bowl, cream butter, sugar and vanilla; beat until light and fluffy. Gradually add cooled mixture. Beat on high speed until mixture reaches the consistency of whipped cream.

The cutest babies have been chosen

WALTON, NY — This year finally saw the comeback of the United Health Services Delaware Valley Hospital cutest baby contest. 71 adorable entries of babies aged two and younger were received.
There was extremely stiff competition but the winners are:
First place—Gracelyn Cronk of Walton, daughter of Shannon Hitt
Second place—Beckett DaBrescia-McGraw of Hancock, son of Kelly and Cassandra DaBrescia-McGraw
Third place—Lincoln Moody of Walton, son of Caitlin and Trevor Moody
Each child will receive a savings account at Wayne Bank.
Funds totalling $1,427 were raised during the event, and will be used for improvements at the hospital.
In addition to the baby contest, the hospital offered blood pressure screening, COVID vaccines, information on the use of MyChart—a patient portal, available to all UHS patients—and information on the importance of physical activity and families enjoying activities together.
The basketball game was a huge success, bringing in hundreds of players over the course of the fair.
The end-of-fair drawing for a $100 gift card, or an indoor/outdoor basketball game, was won by Kim Sperry. The $50 gift card was won by Jacob Weissflog of Endwell.

Kids collect their first harvest

HAWLEY, PA — Two months ago, a dozen kids started their gardening adventure planting herbs, veggies and flowers.
Week after week they took care of their garden, watering, mulching and taking notes in their personal garden journals, and measuring the growth of their plants.
Recently, the reward arrived for which they were working so hard: the day to collect their first harvest of cucumbers, parsley, basil and marigolds.
They left with bags carrying their treasure. Still other plants, like tomatoes, were waiting to be harvested.
This is the first year of the program. In charge were Mary Guccini, the Hawley Public Library’s youth manager, and Sally Ann Whalen and Susan Di Re, members of the Country Gardeners club.
Because of its success, “The Bookworm Friendship Garden,” as the kids choose to call their working area, will take place again next year. So keep an eye on the library programs this spring and join them.

 Wanted: older New Yorkers who make a difference

MONTICELLO, NY — The state office for the aging will celebrate Older New Yorkers’ Day on Friday, November 4, and Sullivan County has an opportunity to include two local honorees.
The deadline for submitting nominees is Tuesday, September 6.
The Sullivan County Office for the Aging is seeking nominations of older adults from our community. These nominations can come from civic leaders, elected officials and community organizations.
The nominee should be a volunteer, aged 55 or older, who has made a difference in the community through civic engagement.
Honorees will be featured on social media and in local media.
