CALLICOON, NY — Slow Food UpDeRiVa will celebrate the ramp, one of this region’s most wonderful wild delicacies, on Sunday, May 6 at the Callicoon Farmer’s Market. There will be demonstrations, recipes and tastings, starting at 11 a.m., with how to make ramp butter and ramp pickles; followed at 12 noon by Bob Eckert of Northern Farmhouse Pasta, with samples of items like ramp ravioli and demonstrations.
From 1 to 2 p.m. there will be a discussion, “Ethical Ramping: How to find, harvest, and transplant ramps,” and from 2 to 3 p.m. participants will move out to Channery Hill Farm, 77 Keller Rd. in Callicoon Center, where a ramp tramp will take place. Participants will meet at the house and be led on an expedition up the hill to forage for ramps and other seasonal vegetables. At 4 p.m. the ramps will be cooked in a variety of ways, and at 6 p.m. there will be a ramp potluck.
