Peace Vodka unveiled

The Dancing Cat Saloon, located on Route 17B, just a stone’s throw from Bethel Woods Center for the Arts, has been up and running for more than a year. But the Catskill Distilling side of the business is now offering its first locally distilled product called Peace Vodka.

With the entire operation now open for business, politicians from the Town of Bethel, county officials and Assemblywoman Aileen Gunther joined owners Monte Sachs and Stacy Cohen in a ribbon cutting ceremony on August 13.

Mat Miller, who gave a tour of the facility and an explanation of the distillation process, said that vodka can be made out of any grain, but that the Peace Vodka is made from wheat because it is abundant, grown locally, and “it gives us the distinct flavor that we’re looking for.”

On its website, catskilldistilleryco.com, the company points out that the vodka is made “one small batch at a time in traditional copper pot stills.” The site also says that another product, Catskill Mountain White Wheat Whiskey, is coming soon.

Cohen said the day had been a long time in coming, but there has been a lot of local support all along the way.

“It’s been like a community project. The community has been with us since day one when they saw us playing with the dirt outside. It’s been great.”
