Baked fennel and proscuitto

I love “Lydia’s Italy,” an Italian cooking show on PBS. The host, Lydia Bastianich, incorporates rustic and traditional Italian cuisine from different regions of Italy in her cooking. The recipes are slow cooked and often decadent in the savory sense of the word.

When I saw a recipe for fennel, a vegetable that is little used in this part of the world, although in season at this time of the year, I decided to tackle it. The flavor of fennel is unique, with a hint of licorice, and pairs perfectly with the saltiness and richness of both the procsuitto and the Romano cheese.

This recipe is perfect for any holiday gathering you may attend because the simplicity of the dish. And it’s delicious. Enjoy.

Holiday cheer for the homebound
