Cheesy Vidalia onion dip

Cheese-based dips are a perennial favorite at parties, but sometimes seem a bit on the light and cool side as the holiday season ushers in the frigid weather. During the short December days, a warm cheese dip really seems to hit the spot. The Vidalia onions add a touch of piquancy to the version below.

Ingredients

2 large Vidalia onions

4 tablespoons butter

2 large garlic cloves

6 ounces parmesan cheese

12 ounces Swiss cheese

½ cup mayonnaise

2 tablespoons Worcestershire sauce

Salt and pepper to taste

Preheat oven to 350 degrees. Cut Vidalia onion in half, then slice into thin strips and chop into small pieces. Cut garlic into fine pieces. In a large saucepan, melt butter. Toss in onions and garlic and cook until tender and a golden brown color.

Remove onions from heat and mix in cheeses, mayonnaise, Worcestershire sauce and salt and pepper. Transfer to casserole dish and bake for about 20 to 25 minutes or until brown on top.

Serve with an assortment of crackers, chips and sliced bread.
