A ‘locavore’ feast held in Tyler Hill

TYLER HILL, PA — Guests of Fallsdale Farm celebrate the harvest with an outdoor buffet of food fresh from its own and neighboring farms. The meal was prepared by noted international Chef André Rosine, now retired and living in White Mills and previously the owner and executive chef of Les Bouchous restaurant in Paris and of Micheline’s in the greater Washington DC area.

Rosine’s buffet included Fallsdale Farm artisanal cheeses paired with Calkins Creek Vineyard Wines and Beach Lake Bread, 4-H rack of lamb, Four Story Farm stuffed suckling pig, boneless quail and chicken from Quails-R-Us farm, fresh from the garden ratatouille and bean salad, River Brook Farm scalloped potatoes and, for dessert, fresh fruit tarts from neighbor and chef Jason Roberts and Sweet Eden in Honesdale, PA.
