Vegan restaurant opens

MILFORD, PA — Roena Parker, the owner of the Blue Waters Café,
says a vegetarian diet isn’t just good for your body. It’s also good for
your soul.
“A vegetarian diet keeps your body sound and your energy flowing,
which has an affect on your spirit—your whole being,” Parker said.
“We have soy-based and gluten-based dishes that approximate
the taste of meat and chicken,” she said.
The restaurant opened on October 20.
“Word of mouth has been our best advertising,” she said. “We’re
doing rather well considering that we just opened.”
Parker wants to share good health with others and to teach
people about eating healthy.
“A vegetarian diet can really affect your life style and well-being,”
she said.
She is the principal chef on week-days and brings in a chef
from New York City on weekends.
The menu includes such meat-based classics as chicken pot
pie, made of a soy and gluten protein with potatoes and vegetables, and a
beef stroganoff made with a gluten-based protein but no beef.
Parker plans to hold cooking classes in January on Thursday
evenings.
The restaurant also serves Sunday brunch.
Parker, 33, a devout Seventh Day Adventist, closes the café on
Saturday in observance of the Sabbath. The restaurant is open Sunday, 11:00
a.m. to 5:00 p.m.; Tuesday, Wednesday and Thursday, 11:00 a.m. to 7:00 p.m.;
and Friday, 11:00 a.m. to 3:00 p.m.
The Blue Waters Café is located at 201 Water Street in Milford,
on the opposite side of the street from Mill Run.
