The moist, warmer air off of the wetlands pushes the codler air off the vineyard, forming a blanket over the vines protecting them from the early frosts. The BashaKill Vineyards have two varieties of vines, Noiret and Cayuga White.

Brimstone Hill is a family-owned and operated vineyard and winery where the visitor can often "talk to the winemaker" so to speak. The vineyard was started in 1969 and the winery was added some 10 years later. Brimstone Hill is especially known for its dry red wines and its sweeter white wines. Further, we are very proud of our sparkling wine, which is made in the method champenoise. All wines are made on premises. The Knapp’s had planted some of the first vinifera grapes along the shores of Cayuga Lake. Knapp was the first winery in the Finger Lakes Appellation to plant and vinify the grape variety Cabernet Franc.
